When the wind blows on the sails, they curve outwards like a fat human belly. So a "bellying canvas" is a sail that's full of wind,meaning that the ship is underway. ... So it's used as a metaphor in the sentence 'but soon an offshore breeze blew to our liking- a canvas-bellying breeze' or personification.
